As you know, I'm not a vegetarian. Traditional Italian cuisine from the South, though, kinda is because historically this was a poor region where most of the protein came from dairy and grains (and fish for the ones on the coastline).
I decided to make this delicious risotto in a way kinda different from the usual but I can assure you it was delicious.
- 70g of rice (I soaked it overnight in water and apple vinegar, here I explain why: https://www.youtube.com/watch?v=8xzmSDSZswc)
- 250g cherry tomatoes
- 1 buffalo mozzarella
- 1 clove of garlic
- 2 tbsp white wine
- 2 tbsp olive oil
- 20g parmesan cheese or grana padano
- black pepper
